Almost all kids, myself included, love Rice Krispie Treats. Something about the sweet melted marshmallow and the crunch together in one sticky square!

Why not make them for a festive treat? Using Lucky Charms Cereal gives them that St. Patty’s Day look, and the magically delicious marshmallows are the perfect topping!

Alright, let’s get started!

INGREDIENTS

  • 6 cups of Lucky Charms Cereal
  • 5 cups of fresh marshmallows
  • 3 tbsp of butter

DIRECTIONS

1. Measure out the cereal. Then grab a few new handfuls from the box, pick out the marshmallows and set them aside of topping. About a 1/2 cup worked for us.

2. Melt the butter in a stock pot.

3. Once butter is melted, add in the marshmallows. The marshmallows won’t take long to melt, so stir continuously as to not start sticking.

4. After the marshmallows are melted, pour in the cereal and mix until it’s all covered.

5. Place parchment paper or grease your pan and dump the mixture in. Spread until the top is even and the pan is covered.

6. Top with set aside marshmallows and place in the fridge for about 15 minutes.

7. Remove from fridge and cut into squares or use cookie cutters.

STORAGE & LEFTOVERS

Wrap these treats up in cling wrap to prevent air getting in. Best used within 2 days… if they last that long!

TIPS & TRICKS

FRESH MARSHMALLOWS! This will make a huge difference. Buy a new bag, it’s absolutely worth it!

If you want to cut down on the sweetness, throw a pinch of salt into your melted marshmallows before you add the cereal.

Top the freshness level by adding a tsp of vanilla extract. Not necessary, but it will take the yum factor up a notch.

Resist the urge to press the mix into the pan. If you pack them in, they will be harder when they’re ready to eat. Run your fingers under running water, shake off the drips and very gently press down the mix into the pan.
